I have read the documentation, but it does not explain the type of integration offered with structured data. My question is: is 4SEO able to dynamically map Joomla content (COM_CONTENT) custom fields, as is the case with the Google Structured Data plugin?

At this stage, no, we do not read custom fields as we normally get all required Structured data from regular Joomla fields.
We do plan on adding this of course. Can you give an example of which Structured data content you obtain from a custom field, I mean a real life example? This would help prioritize.

In my case, for some categories I use Joomla Content to create product pages. With "Google Structured Data" by Tassos I can dynamically generate structured data conforming to schema.org/Product from Joomla custom fields, appropriately created, and in other parts of the site structured data conforming to schema.org/TouristAttraction are generated, using Joomla core and GSD by Tassos. I think it's a basic feature, since we're talking about SEO 2021 ;) Regards

Well, SEO in 2021 is definitely about Structured data. But the number of sites using Custom fields is actually incredibly tiny (sh404SEF and wbAMP experience here) so it was not priorized as an early feature.
In your e-commerce case, we will first have support for common e-commerce extensions such as J2Store, VM, Hikashop (should happen in July I hope, if not will be for version 1.3 on September 16).
Of course Custom fields add a lot of flexibility to Joomla so we will definitely support them in multiple places such as structured data of course, but also title and description (can have separate title/desc for search and social sharing for instance, or set separate search and social sharing images, ...)
I hope this will happen before version 2 (version 2 is scheduled for end of year). The 4SEO roadmap is flexible, we have already developed some features meant for version 1.3 actually.
But not everything can be done right away!
