On my site www.poker-coaching.net, search engines and crawlers keep finding strange links, like:

How can I avoid this with sh404SEF?
Also, if I install sh404SEF, how can I generally determine how the plugin builds the URLs, for example: can I have URLs built just from the alias of that menu item, instead of mysite.com/level1-menu_item_alias/level1-menu_item_alias/ ?
I am aware I can manually edit URLs, but with 600 URLs, it would be easier if I didnt have to go through all of them one by one?

If we are talking about regular Joomla content, and for many other extensions, sh404SEF will not use menu items to build URLs. It will use category(ies) aliases and item aliases and you can configure what it uses to build the URLs.

How can I avoid this with sh404SEF?

I can't say, depends on where they are linked from and why they can be found.

If I visit http://www.poker-coaching.net/tests/bester-titan-poker-bonus-code/19-german-category/87-online-poker-einzahlung-methoden-vergleich-vorteile-nachteile, the URL is loaded, return some content and is indexable. So it's normal search engines would index that page if they find a link to it. So the real question is why do you have a link to that page on your site?

A crawler such as Screaming Frog will tell you if that link is on your site and on which page the link can be found. You can then fix that problem by removing that link.
