I use a SEO monitor (Morningscore) and that says my meta description is too long. 163 and not below 160.

When it cuts long descriptions it adds ...
But it cuts it by 160 signs and then adds ... so it will be 163 signs in total.

I use a SEO monitor (Morningscore) and that says my meta description is too long. 163 and not below 160.
And they are wrong to say so. Your meta description should and can be as long as you need to describe things.
But it cuts it by 160 signs and then adds ... so it will be 163 signs in total.
Which is 100% fine and will stay like that.
DO NOT trust these tools blindly.
