Looking at my DB, i noticed that all 404s are written to the sh404sef_urls table, is this correct behaviour ? Shouldnt they be written to the sh404sef_hits_404s since this table exists ?

This is the correct behavior. The hits table only records, well, hits to the 404s. 404s are regular URLs that can usually be "promoted" to normal URLs if/when their non-sef counterparts are identified for instance.
