Hi Yannick

I want to switch these pages off eventually. Will the redirects from old site to new site still work if I switch the old links off at menu level?

Hi

Yes, redirects work at URL levels, it's not related to the actual content being there. As long as you have the aliases in place and the old site up and running, you'll be good.
