I've been reviewing the documentation as well as the parameters on sh404SEF's configuration section and cannot finf how to solve it

Please, do you have any idea about where and how I can solve it?

Hi

sh404SEF does not handle those structured data. They are created either by an extension (less likely) or more likely by your template but unfortunately they are not providing valid sructured data as several fields are missing.

Either your template provider can or will fix that in an update, or you can also use a dedicated structured data extension for Joomla (see JED for that).
