Hi. My client rebranded and has a whole new domain. Their old site still has sh404sef installed and running. I am wanting to redirect individual pages on their old site to specific pages on their new site letting google know that they have permanently moved these pages while still passing the link juice. How can I do that with sh4o4sef?

You should set redirects using the corresponding features of sh404SEF. This is described step by step and in details on this page of the documentation and the following.
You basically have 2 options:
- one to one redirects
- if there are some patterns in your redirects, you can save time by using generic redirects such as /catalog/products/{*} --> /shop/{*} which will redirect possibly many URLs with only one line.
